I made a peach and nectarine crumble for my dad's birthday a while ago. My college dining hall has desserts available every day of the semester, and one of the things most commonly found there is peach cobbler, but I tried it once and it tasted murderously sweet. Like syrup and guargum with a hint of apathetically canned nondescript fruit. I wanted to make a version where you can actually taste the main ingredients.
If you wish to eliminate regular white flour from this recipe for any reason, using 2 cups of almond flour will produce nearly the same result and taste just as good, or better. Ingredients 3 peaches 1 nectarine a shallow round dish (the dish I used is about 9" in diameter) 1 cup almond flour 1 cup white all-purpose flour 2 tablespoons coconut flour 1/4 cup honey 3 tbsp butter (cold, unmelted) 1/2 tsp salt 1/2 tsp cinnamon 1/2 tsp lemon juice 1. Grease the shallow round dish lightly with butter. 2. Wash and slice peaches, and nectarines, and arrange so they cover the bottom of the dish with no gaps. 3. Lightly sprinkle 1/2 tsp lemon juice and 1/2 tsp cinnamon 3. Sprinkle with 2 tbsp of coconut flour, try to disperse evenly 4. Pour about 2-3 tbsp of honey in a swirl pattern from the center of the dish to the outside to evenly and lightly coat the fruits 5. Place dish in refrigerator 6. In a large bowl combine flour, salt, remaining honey, and butter - chopped into small pieces. 7. Use a spoon to mix the ingredients in the bowl by hand until the butter and honey and flour are well-combined and form small clumps. Takes some work. You can taste to adjust the amount of honey if desired. 8. Evenly distribute the crumble mixture over the fruit layer. 9. Bake at 375 F for 40 minutes or until faintly golden-brown.
